OJEJE was born from a longing for Jeju - an island shaped by the sea, where the horizon stretches endlessly and the rhythm of the waves becomes part of everyday life.

Rooted in the calm spirit and depth of Jeju, OJEJE brings together authentic Korean tonkatsu, freshly made udon

and thoughtful hospitality to create one harmonious dining experience.

    Our tonkatsu is cut from carefully selected pork and fried only until it reaches the exact moment it should, no further. A light, golden crust gives way to meat that remains tender, juicy and full of flavour.

  • 김지훈  KIM JI-HOON

    Owner-Chef and Founder of OJEJE

    Chef Kim Ji-Hoon began his culinary journey at the age of 17, inspired by his parents’ restaurant. After graduating in Hotel Culinary Arts from Cheju Halla University, he spent approximately 15 years building his experience across cooking, service and restaurant operations.

    ​

    In 2020, he founded OJEJE, shaping every aspect of the brand - from its menu and dining experience to its operational philosophy. Today, he leads six restaurants and two production facilities in Korea, with OJEJE Singapore marking the brand’s first international location.

    김준휘 KIM JUN HWI

    Head Chef

    A Japanese-cuisine specialist experienced in menu development and multi-unit kitchen operations. He oversees tonkatsu and udon development, cooking standards, staff training and quality consistency across OJEJE’s kitchens.

    JANG HAE SANG

    Sous Chef & Udon Production Lead

    A dedicated culinary professional known for his responsibility, diligence and strong work ethic. He oversees restaurant operations while leading udon production at OJEJE.

    하성운 HA SUNGWOON

    R&D Chef & Culinary Director

    A South Korean chef with over 15 years of experience in restaurant operations, menu development and hospitality concepts. His approach combines culinary creativity with practical execution, consistency and guest experience.
